The newest addition to the thriving Underbank scene is Laco. It is a contemporary and approachable cafe with all the trappings you’d expect.

Upon entry you are greeted by sporadically placed indoor plants, rustic wooden tables and excellently poised low lighting. The decision to add local artwork portraying The Plaza and Market Place are a nice touch that really jump on that up and coming pride of being in Stockport.  

We, of course, truly respect that decision. Especially because Stop in Stockport is written on one of the prints. Let us know if you find it. 

Laco is an independent cafe that is run by a friendly young couple. Laura told us that the name came from the first two letters of each of their names. La[ura] and Co[smin] hence creating Laco.

I think the creation of the name and the goofy caricature drawing of them both on the wall just displays a positive easy going vibe. One which we can all get behind. 

Now to the good stuff… Coffee, cakes and salads.

We opted to try the salad box simply because we fancied going for the healthy option…  
There are 4 options that range from Tuscan panzarella, roasted beet & kale, sesame orzo with broccoli and our personal fave Mediterranean couscous and roasted veggies. 

You then choose whether you want chicken or halloumi as the main component. The salad box also includes house slaw, hummus and pita bread and it only costs £5.50.

What an absolute bargain. The box was full to its rafters and it tasted fantastic. We’d highly recommend you give one a try. Honestly, we took some home and had two meals worth. 

There is also many other options on the menu including your usual sandwiches, toasties , soups and breakfast options. The obligatory smashed avocado on toast makes the cut because, lets be honest, we all love it. 

One thing we have to mention is the strange but overwhelmingly addictive beetroot latte. It sounds so wrong, almost unethical, but its earthy taste and funky pink colour gives the drinker quite a memorable experience. You HAVE to try one.

We had a great time at Laco and really felt as if we helping two people follow their dream of being small business owners. The space is small, cozy and inviting and is perfect for a quick bite to eat or a long lunch.

As Underbank continues to regenerate it is small businesses like these that we all need to support. We recommend you head down to Underbank and give Laco a try to see if this brand new business is going to be your next lunch spot.
